 SWEET POTATO OMELET WITH SAUTÉED APPLES & BLUEBERRIES

Ingredients:

- 1/2 sweet potato grated

- 1 egg

- 1/2 small banana, mashed

- 1/2 apple, diced

- 1/3 cup frozen blueberries

- dash of salt

- dash of cinnamon

- 1 TBSP coconut oil

- 1 TBSP Almond butter

Directions:

In a medium sized bowl mix together the sweet potato, 1 egg, mashed banana, a dash of salt, and a dash of cinnaman. In a small skillet turn on the stove to medium heat and add the coconut oil. Once melted add the sweet potato mixture to the skillet. Let cook until the bottom is browned and it is easy to flip over (like a pancake). Cook the other side for a few more minute or until its is fully cooked through. Remove from skillet and place on plate. Add the apples, blueberries, and a dash of cinnamon to the remaining coconut oil and saute for few minutes or until the apples soften. Top over the sweet potato omelet. Add a few slices of the remaining banana and your scoop of almond butter. Enjoy!

INSTANT POT BANANA OATMEAL

Ingredients:
- 2 cups steel cut oatmeal
- 4 cups water
- 1 tbsp coconut oil
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 mashed banana
Directions:
Add all ingredients to instant pot and mix well. Close lid. Manually add 10 minutes and cook on high. Let pressure release slowly once done cooking. Serve with milk. Enjoy!

SWEET POTATO SCRAMBLE WITH EGGS & AVOCADO

Ingredients:

- 2 TSP Coconut Oil

- 1 sweet potato

- 1/2 bell pepper

- 1/2 onion

- 1 cup spinach (frozen or fresh)

- 2 eggs

- 1/2 avocado


Directions:


Dice the sweet potato into small cubes. Next dice the onion and bell peppers into small pieces. Place coconut oil in skillet and turn to medium heat. Once melted add sweet potato, onion, and bell peppers. Mix and make sure all the the veggies are covered in a light coat of coconut oil. Place lid on skillet  and let cook for 15 minutes occasionally stirring. Add the spinach and mix in. Cook until sweet potato is cooked all the way through and tender, about 5 more mins. In a separate frying pan cook your eggs how you like them. I prefer over easy but sometimes I like to mix it up and do scrambled eggs. Add sweet potato scramble to a plate or bowl and top with sliced avocado and your eggs. Side note: I usually save half of the scramble in a container for the next day since it produces a big portion.

SIMPLE EGG & SPROUTED BAGEL

Ingredients:

- 2 hardboiled eggs

- 1 sprouted bagel (alvarado street bakery is our favorite)

- 1 avocado

- alt and pepper to taste

Directions:

Super simple and quick. Toast your bagel. Add your avocado and mash to the bagel. Add salt and pepper to avocado and eggs. Enjoy!
