LUNCH RECIPES
TACO SALAD
Ingredients:
- 2 cups spring mix salad
- 1/2 cup precooked brown rice
- 1/3 cup precooked ground turkey with organic taco seasoning
- 1/2 avocado
- 2 Tbs salsa
- 1 Tbs sour cream

Directions:
Lightly toss together and enjoy!

*side note: no dressing is necessary since the salsa and sour cream mixed together make a lovely dressing
(Another variation would be to use grilled chicken instead of ground turkey)
GROUND BEEF CAULIFLOWER RICE
Ingredients:
- 1/2 tbsp olive oil
- 1/2 lb ground beef
- 1 cup cauliflower rice
- 1/2 cup onion
- 1 1/2 tsp montreal seasoning
- Dash of crushed red pepper (optional)
Directions:
In a medium skillet add olive oil and turn to medium heat. Add onion. Let saute for about a minute. Add ground beef. Add montreal seasoning. Mix well with onions. Cook until slightly browned (about 5-8 mins). Stirring occasionally. Add cauliflower rice and cook for another 3-5 minutes. Add a dash of crushed red pepper. Serve and enjoy!
TUNA WRAPS
Ingredients:
- 1 can of tuna
- 1 TSBP Mayo (Primal Kitchen is my favorite Whole30 avacado oil mayo)
- 1 celery stick, diced
- 1 tsp of mustard (or more if you are mustard fan like me)
- 2 cabbage or romaine leaves
- 1/2 tomato, sliced
- salt and pepper to taste

Directions:
Drain the tuna and add to small bowl. Add in the mayo, the diced celery, the mustard, and a dash of salt and pepper. Mix together. Split mixture in half and put half in one cabbage or romaine leaf and the other half in the other leaf. Top with sliced tomato. Add another dash of salt and pepper. Enjoy!
SWEET KALE SALAD
Ingredients:
- 1/3 cup shaved broccoli
- 1/2 cup shaved brussels sprouts
- 1/3 cup shaved green cabage
- 1/2 cup shaved Kale
- 1/3 cup shaved Chicory
- Dried Cranberries (sprinkle sparingly)
- Roasted Pumpkin Seeds (sprinkle sparingly)
- grilled chicken sliced thin or diced
Dressing:
- 1 to 1 1/2 Tbs organic poppyseed dressing (dress to taste but do not overdress! ;)
Directions:
Mix all together and enjoy!
